What is a Brisket?

Brisket is often the cheaper sunday roast dinner and in times gone past could be quite fatty, however modern style butchers tend to remove more of the fat than even before. The older generation of my customer more often than not buy brisket and they know what they are doing.

Butchers Tip
On the Brisket the thicker end is often thought of as the better cut.

Cooking Tip
Brisket needs to be steamed or boiled really, some roast it but not recommend.

Where does it come from?
Brisket is positioned at the top of the fore beef.
